💥’CHKN’ NOODLE CUP-A-SOUP💥PUT IT IN A MASON JAR AND TAKE IT ON THE GO!

🍜INGREDIENTS:
📌2.5L Spring Water
📌1.5 Cups Cubed Butternut Squash
📌1/2 Cup Diced Onion
📌2 Cups Chopped Kale
📌1 Zucchini Diced
📌2 Tbsp Grapeseed Oil
📌1.5 Tbsp Sea Salt
📌120g Spelt Noodles
📌4 King Oyster Mushrooms (shredded)
𝙊𝙥𝙩𝙞𝙤𝙣𝙖𝙡 𝘼𝙙𝙙-𝙄𝙣𝙨 (only add if you're NOT really sick or DON'T have a lot of mucus build up!)
📌Chayote Diced (tastes like baked potatoes)

🍜HOW TO:
👉🏽Begin by adding all of your ingredients to your pot over medium-high heat (all except spelt noodles and mushrooms). Allow to cook for approx 45 mins (to the point where your water has reduced by approx 1/4, creating a beautiful rich colour, full of flavour type broth - be mindful not to over reduce, as we still need enough liquid to cook the noodles towards the end).
👉🏽In the meanwhile, prepare your ‘chkn’! To do so, shred the stalks of your mushrooms with a fork and finely slice the caps (You can easily shred your mushrooms using a fork, by pressing into your stalks with the tips of the fork and dragging down to shred).
👉🏽Add your shredded mushrooms to a separate pan along with some sea salt and 1 + 2/3 cups of water. Allow to cook until all water has evaporated, then stir fry for several minutes.
👉🏽Transfer your mushrooms and your noodles to your boiling broth, cooking for approx 6 mins further (you want to wait to add your ‘chkn’ and noodles in towards the end, once the soup is almost ready).
👉🏽Place lid on to your soup pot and remove from the heat, allowing your noodles time to further swell and absorb all the flavours of your broth.
👉🏽Season to taste with some additional sea salt (if necessary) before digging in! I love adding some fresh avocado to serve!  Don't add the avocado, chayote, or cream if you need to clear up mucus. Those these are alkaline, they could slow the progression of getting better...quicker!  :)
