Alkaline-Electric Puerto Rican Empanadas
Dough Ingredients:
3 1/2 cups spelt flour
2 ripe burro bananas
1/3 cup sparkling water
1/4 cup grape seed oil
1 tsp sea salt
“Meat” filling:
1 white onion
1/2 cup boiled walnuts
2 diced portobello mushrooms
1 diced green bell pepper
Sofrito (check pinned Habichuelas Guisadas post)
Alkaline Sazón - sea salt, oregano, onion powder, shallot powder, cayenne, achiote.
2 blended tomatoes (tomato paste)
Grapeseed oil to fry
Cilantro & Key lime for topping
Instructions
1. Chop all of the onion, peppers, and mushrooms. Add grape seed oil to a medium heat pan.
2. Fry 2 tsp of sofrito in oil before adding the onions & bell peppers
3. Season with alkaline Sazón: sea salt, cayenne, achiote, coriander, oregano, & white onion powder. Cover and let the flavors build.
4. Add blended tomatoes, then cook on medium heat for 5 minutes before adding diced portobello mushrooms and walnuts.
5. Cook down the walnuts & mushrooms until they reach a meaty texture.
6.Roll out dough using a rolling pin and parchment paper. Using the shape of a small bowl create circles of dough.
7.Scoop 2 tbsp of mushroom/walnut filling into the center of your dough, then fold in half and press edges together with a fork.
8. Fry in grape seed oil on medium heat until crispy.

My Nacho Cheez Recipe:
1 c Hemp Seeds
1/2 tsp Mineral Sea Salt - can be found at Crush Fosters site
1 tsp Mushroom Powder
1 tsp Annatto Powder
1/3 c Spring Water
1/2 c Orange Bell Pepper
1/4 of a Shallot
1/4 of a Red Onion
Juice of 2 Key Limes
