Fluffy Berry Spelt Pancakes

3 Cups Spelt Flour

2 Cups Sparkling Water – be sure it’s room temp

1 pinch of Sea Salt

¼ Cup Agave/Date Syrup

Blend it all together until smooth, but not toooooo smooth!

 

Next, grab a handful of your favorite fruits!  Today, I feel like using raspberries and blueberries.  They’re both very cleansing and healing for the gut and blueberries are especially great for memory!  Mash these fruits together for an amazingly sweet, but not toooooooooo sweet topping for your pancakes!  Drizzle a bit of agave on top.  Whew!! Man-u-phique!

 

INSTRUCTIONS

Prepare the Batter:

In a large mixing bowl, combine the spelt flour and sparkling water.

Add a pinch of sea salt to the mixture.

Pour in the agave to sweeten the batter.

Taste it! How does it taste to you?  Anything you’d like to add?  Go ‘head!

Blend the Ingredients:

Using a whisk or blender, mix the ingredients until they form a smooth batter. Be cautious not to over-blend; a slightly lumpy batter is desirable for fluffy pancakes.


Rest the Batter:

Allow the batter to rest for about 5-10 minutes. This gives the spelt flour time to absorb the liquids, resulting in a better texture.


Preheat the Pan:

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a small amount of oil.


Cook the Pancakes:

For creativity, use stainless steel rings to create “perfect” ring size cakes!

Pour a ladleful of batter onto the preheated pan to form pancakes of your desired size.

Cook until bubbles form on the surface of the pancakes, and the edges start to look set.

Add the mashed fruit here.

 

Flip and Cook the Other Side:

Gently flip the pancakes with a spatula and cook the other side until golden brown.

 

Serve Warm:

Once cooked, transfer the pancakes to a serving plate.

Serve warm with your favorite toppings, such as more fresh fruit, agave, or date syrup.
