Alkaline-Electric Gluten Free Bread
The BEST part, NO Yeast AND No Baking Powder 🌱🍞
Ingredients:
2 cups chickpea flour
1 1/2 cups spring sparking water - freshly opened and room temperature
1 tsp sea salt
1 tsp agave
1 tbsp grapeseed or avocado oil
Sesame seeds or melon seeds to sprinkle on top
Directions:
Preheat oven to 180C / 356F.
Prepare baking tray lined with baking paper.
Place chickpea flour in a large bowl, then add sea salt, agave, grapeseed oil and water. Start with 1 cup and slowly fold the water into the flour (VERY IMPORTANT) do not mix, fold it in).
Add the rest of the water and fold the rest into the mixture.
PRO TIP: I sometimes add 2 TBSP of Sea Moss gel to help with rise - https://allthingsalkaline.com/collections/sea-moss
You can also add 2 TBSP of Apple Sauce. It will make it a little sweet!
Sprinkle on top with sesame seeds/melon seeds.
Pour the mixture into baking tray and bake in preheated oven for 45min, until slightly brown on the top.
Do not over dry it.

Here's the recipe for my pancakes! As far as the shape, just grab any mold from Amazon, Michaels, or my favorite store, Hobby Lobby! :) I get inspired by so many things just walking in that place!

Here's my recipe for Alkaline-Electric "Eggs".
Ingredients:
- 1 cup chickpea flour
- 1 1/2 cups water - pour in slowly
- 2 tablespoons grapeseed oil
- 1 small red onion, diced
- 1 bell pepper, diced (any color but green)
- 1 1/2 cups of kale, finely chopped (for me, the more the better)
- 1/2 cup of baby bella mushrooms
- 1/2 teaspoon annato powder (for color and flavor)
- 1/2 teaspoon cumin powder
- 1 teaspoon dill
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh herbs (e.g., cilantro or parsley) for garnish
Instructions:

Prepare Chickpea Flour Batter:
- In a bowl, whisk together chickpea flour and water until you have a smooth batter, then add annato and other spices.

Sauté Vegetables:
- In a large skillet, heat grapeseed oil over medium heat.
- Add diced red onion until almost translucent to give aromatic smell! Next, the remaining veggies. Sauté until they are tender.

Seasoning:
- Add all the seasonings on top of veggies. Mix, then spread them around the pan evenly before next step.

Add Chickpea Flour Batter:
- Pour the chickpea flour batter into the skillet with the sautéed vegetables.

Cook and Stir:
- Cook the chickpea flour mixture for 5-7 minutes, stirring continuously until it thickens and reaches a scrambled egg-like consistency.

Adjust Seasonings:
- Taste and adjust seasonings as needed. You can add more salt, pepper, or any other preferred spices.

Garnish and Serve:
- Garnish the chickpea flour-based vegan scramble with fresh herbs like cilantro or parsley.

- 1 10-ounce bag frozen strawberries
- 1 thumb-sized piece of peeled fresh ginger
- 1/4 cup agave/date syrup
- 1/3 cup key lime juice
- Pinch of sea salt
- 1/3 cup SPRING water

- In 2 glasses, alternate layers of coconut milk and the blended "daiquiri mixture."
- Use a spoon to gently swirl the layers.

Fluffy Berry Spelt Pancakes
Fluffy Berry Spelt Pancakes
3 Cups Spelt Flour
2 Cups Sparkling Water – be sure it’s room temp
1 pinch of Sea Salt
¼ Cup Agave/Date Syrup
Blend it all together until smooth, but not toooooo smooth!
Next, grab a handful of your favorite fruits! Today, I feel like using raspberries and blueberries. They’re both very cleansing and healing for the gut and blueberries are especially great for memory! Mash these fruits together for an amazingly sweet, but not toooooooooo sweet topping for your pancakes! Drizzle a bit of agave on top. Whew!! Man-u-phique!
INSTRUCTIONS
Prepare the Batter:
In a large mixing bowl, combine the spelt flour and sparkling water.
Add a pinch of sea salt to the mixture.
Pour in the agave to sweeten the batter.
Taste it! How does it taste to you? Anything you’d like to add? Go ‘head!
Blend the Ingredients:
Using a whisk or blender, mix the ingredients until they form a smooth batter. Be cautious not to over-blend; a slightly lumpy batter is desirable for fluffy pancakes.
Rest the Batter:
Allow the batter to rest for about 5-10 minutes. This gives the spelt flour time to absorb the liquids, resulting in a better texture.
Preheat the Pan:
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a small amount of oil.
Cook the Pancakes:
For creativity, use stainless steel rings to create “perfect” ring size cakes!
Pour a ladleful of batter onto the preheated pan to form pancakes of your desired size.
Cook until bubbles form on the surface of the pancakes, and the edges start to look set.
Add the mashed fruit here.
Flip and Cook the Other Side:
Gently flip the pancakes with a spatula and cook the other side until golden brown.
Serve Warm:
Once cooked, transfer the pancakes to a serving plate.
Serve warm with your favorite toppings, such as more fresh fruit, agave, or date syrup.

Chickpea Patties
Ingredients:
- 1 box (13.4 ounces) chickpeas, drained and rinsed
- 1/2 cup alkaline breadcrumbs or ground quinoa - https://mrstaayhappy.com/shop/ols/products/alkaline-breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro or parsley
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika

- 2 tbsps GOLD Sea Moss gel (for binding) - https://allthingsalkaline.org/collections/sea-moss
- 1/2 cup chickpea flour (for binding) May need more when you begin patting them into shapes.
- 2 tablespoons olive oil (for cooking)
Instructions:

In a food processor, combine chickpeas, breadcrumbs/ground quinoa, red onion, cilantro or parsley, cumin, coriander, paprika, salt, and papaya pepper. Pulse until well combined but not completely smooth. If the mixture is too dry, you can add a beaten egg to help bind it together.

Form the mixture into patties of your desired size. If the mixture is too sticky, you can wet your hands to make shaping easier.

Heat grapeseed oil in a pan over medium heat.

Place the chickpea patties in the pan and cook for 4-5 minutes on each side or until golden brown and crispy.

Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.

Serve the chickpea patties with your favorite dipping sauce, in a pita, or as a topping for salads.
