Hot Butternut Squash Dog

Ingredients:

4 large slices of butternut squash, peeled and trimmed to hot dog bun length

4 alkaline hot dog buns (try your best to use spelt/eikorn flour or any Dr. Sebi approved alkaline-electric flour)

   Marinade:

1 teaspoon spring water

1 tablespoon coconut aminos (also a great soy sauce alternative…you’re welcome)!  😊

1 tablespoon liquid smoke

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon date syrup or agave

1/4 teaspoon onion powder

1/8 teaspoon ground ginger

1/8 teaspoon dried thyme

Pinch of ground papaya seeds (tastes like black pepper) https://mrstaayhappy.com/shop/ols/products/alkaline-black-pepper

1/8 teaspoon sea moss gel (optional, for added thickness)

Keep an eye out of water amount.  You may need to adjust consistency.  Pour in a bit at a time.  Cooking is a sport and must be practiced! 

INSTRUCTIONS:

Preheat your oven to 400°F (200°C).

In a small bowl, whisk together all the marinade ingredients until well combined. Adjust the water quantity to achieve a smooth and pourable consistency.

Place the peeled and trimmed butternut squash in a baking dish or a zip-top bag and pour the marinade over them. Make sure the butternut squash are evenly coated. Let them marinate for at least 30 minutes, or ideally, marinate them overnight for enhanced flavor.

After marinating, transfer the butternut squash to a baking sheet lined with parchment paper. Reserve the remaining marinade.

Bake the butternut squash in the preheated oven for 25-30 minutes or until they are tender, turning them halfway through and basting with the reserved marinade.

While the butternut squash are baking, you can toast the hot dog buns in the oven or on a skillet for a few minutes until they are warm and slightly crispy.

Once the butternut squash are done, place each one in a bun and top with your favorite hot dog toppings such as mustard, ketchup, onions, relish, or vegan cheese.  Keep it as alkaline-electric as possible to reduce mucus, inflammation, and keep your lymphatic system/immune system in tip-top shape!

📌1 cup cilantro/coriander (chopped)
📌1/4 cup olive oil
📌1/4 cup tahini
📌2 Tbsp key lime juice
📌Agave
📌1 Shallot
📌Approx 3/4 Tsp Sea Salt
📌Water (Start with one tablespoon and adjust to desired consistency, being mindful not to water down the flavors)

📌Optional: I occasionally add avocado to this one but prefer the avo chopped directly into my salad instead of mixed into the dressing/dip

Alkaline-Electric Puerto Rican Empanadas
Dough Ingredients:
3 1/2 cups spelt flour
2 ripe burro bananas
1/3 cup sparkling water
1/4 cup grape seed oil
1 tsp sea salt
“Meat” filling:
1 white onion
1/2 cup boiled walnuts
2 diced portobello mushrooms
1 diced green bell pepper
Sofrito (check pinned Habichuelas Guisadas post)
Alkaline Sazón - sea salt, oregano, onion powder, shallot powder, cayenne, achiote.
2 blended tomatoes (tomato paste)
Grapeseed oil to fry
Cilantro & Key lime for topping
Instructions
1. Chop all of the onion, peppers, and mushrooms. Add grape seed oil to a medium heat pan.
2. Fry 2 tsp of sofrito in oil before adding the onions & bell peppers
3. Season with alkaline Sazón: sea salt, cayenne, achiote, coriander, oregano, & white onion powder. Cover and let the flavors build.
4. Add blended tomatoes, then cook on medium heat for 5 minutes before adding diced portobello mushrooms and walnuts.
5. Cook down the walnuts & mushrooms until they reach a meaty texture.
6.Roll out dough using a rolling pin and parchment paper. Using the shape of a small bowl create circles of dough.
7.Scoop 2 tbsp of mushroom/walnut filling into the center of your dough, then fold in half and press edges together with a fork.
8. Fry in grape seed oil on medium heat until crispy.

Ingredients:
Baby bell peppers or regular bell peppers

🌱Stuffing:

1 large ripe avocado
Small bunch coriander
Small bunch fresh dill
1/2 red onion
1/2 chopped bell pepper
Sea salt, cayenne pepper for taste
2 Tbsp Sauce

🌱Sauce ingredients

1/2 cup Brazil nuts
1/2 cup water
1/2 tsp sea salt
1/4 tsp cayenne pepper
1/2 tsp agave
1 tsp onion powder
1 key lime juice

Ingredients:

  • Frozen strawberries
  • Kiwi
  • Agave
  • Limes
  • Sparking water
  • Ice

First, blend frozen strawberries, kiwi, ice, agave, and lime juice in a blender.

Then, once those ingredients are blended smoothly, add sparkling water and more ice.

Last, SHAKE ingredients together (do not blend because the sparking water will turn flat) and enjoy with an organic strawberry on top ! 🍓
